Kobayashi Brewery was established in 1872 (Meiji 5), with a production of about 1,200 koku, and represents the brand "Phoenix Miden". The winery has abundant sunlight and mountain groundwater. "Meitian" is named after its location in Mita Village, a high-quality rice production area.
The state-run TV station NHK also dedicated interviews and produced special reports. This wine has been stored at ice temperature (below 0 degrees) for a year, using local Tochigi yeast (Ginjo yeast with high aroma and low acidity). It also uses a champagne bottle made in Italy, with a rich ripe fruit aroma, smooth and layered.
